How to Make Leroy's Catfish

This is a recipe for delicious simmered catfish thats healthy to boot.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 pounds catfish fillets
  • 6 tablespoons olive oil
  • 2/3 cup minced carrot
  • 2/3 cup minced onion
  • 4 tablespoons minced celery tops
  • salt
  • pepper
  • 1/2 cup red wine
  • 2 cans crushed tomatos
  1. Step 1

    In a very large skillet heat up olive oil and saute onions and carrots until brown. Remove the vegetables and set aside.

  2. Step 2

    Reheat the oil until sizzling and add catfish and sear on both sides and top with the vegetables you simmered in step one. Add salt and pepper and diced tomato and wine and ladel the sauce over the fillets, turning them to coat both sides of the fillets.

  3. Step 3

    Cover with a lid and simmer for about 8 minutes. Serve hot.
