How to make lentil salad

This recipe is for about 6 people and it is low fat and has about 250 calories per serving.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 1 cup of lentils (preferably french green but the others are perfectly fine)
  • 7 tablespoons of olive oil
  • 2 tablespoons of white wine
  • 1 teaspoon of mustard
  • 1 teaspoon of sea salt
  • 2 or 3 tomatoes cut in small dices
  • 2 Belgian endive, halved lengthwise and cut in dices
  • 1 red bell pepper diced
  • 1 yellow pepper diced
  • 1/2 cup of parsley
  • 1/2 teaspoon of ground pepper
  • 1/2 teaspoon of dried tarragon
Step1
In a suacepan healt the lentils in boiling water.
Step2
Reduce heat, cover and simmer for about 40 minutes, until lentils are tender. Drain water and put lentils in a large bowl
Step3
In a glass measure whisk together the olive oil, vinegar, mustard,tarragon, salt and pepper.
Step4
Toss lentils with half of the tarragon dressing and let them cool.
Step5
Stir in tomatoes, endive, red pepper, yellow pepper and parsley.
Step6
Add the remaining dressing to the lentil salad, tossing gently to coat.
