Here's a great recipe. It has 27.5grams protein, 6gcarbs. 2g fiber, and 5.5g fat

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 1 tbsp. olive oil
  • 4 boneless, skinless chicken breast halves
  • 3/4 salt divided
  • 1/2 tsp. pepper
  • 1/2 cup dry white wine
  • 1 pint cherry tomatoes, halved
  • 1/4 cup pitted, halved black olives
  • 2 garlic cloves,minced
  • 1/2 tsp dried thyme
  • 2 tbsp. fresh minced basil

Step1
Heat oil in a large , deep skillet over medium- high heat
Step2
Season chicken with 1/2 tsp. each salt and pepper
Step3
Place chicken in skillet and cook for 2-3 minutes per side
Step4
Add wine and cook one minute
Step5
Add tomatoes, olives, garlic, thyme and remaining salt.
Step6
Bring to a simmer: turn heat to medium -low
Step7
Cook uncovered, turning chicken once for 10 minutes, or until chicken is cooked through.
Step8
Serve topped with fresh basil
