Easy Shrimp Scampi
Easy Shrimp Scampi

I love shrimp any way you prepare it but this has to be one of my favorites. It is delicious with fresh shrimp but I am going to give you the version using frozen pre-cooked shrimp for the busy mothers in this hurry up world we live in.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 lb Shrimp, large pre-cooked
  • 1/4 cup olive oil
  • 4 tbsp. Butter
  • 1/2 cup white wine (Arbor Mist Orchard Fresh Chardonnay is inexpensive with a light sweet flavor)
  • Fresh Chopped parsley
  • 2 large cloves Garlic, minced
  • 1/2 Onion, chopped
  • 1 tbsp.Weber Zesty Lemon Seasoning
  • Fresh Ground Pepper
  1. Step 1

Thaw Shrimp. Note: If you want to use fresh shrimp peel, de-vein leaving tails & cook using only a little salt. Do not overcook.

  2. Step 2

Heat Olive Oil and sauté onion & garlic for 2 - 3 minutes in a large skillet over a medium heat.

  3. Step 3

Pour wine (may substitute chicken broth) into pan and reduce (5 minutes).

  4. Step 4

Add Shrimp and heat for 2 - 3 minutes or until hot through the center. Do Not Over Cook.

  5. Step 5

Stir in the butter, parsley and Zesty Lemon seasoning, sprinkle with freshly ground pepper for added flavor.

  6. Step 6

Serve with your favorite pasta or rice. Enjoy!

Tips & Warnings
  • Use a good wine, not cooking wines you see on the grocery shelf. These have a strong flavor that only becomes more pungent when heated. I like the Arbor Mist Chardonnay because it is made with apples and pears it adds a light sweet taste and you never taste the wine.
  • You can make this recipe your own by replacing the onion with shallots and adding a little Lemon Zest.
  • I like to serve this over Lemon Zest Pasta sprinkled with grated Parmesan Cheese.
