The cut of meat you just purchased from the supermarket is tougher than expected. A little attention and a few spices will go a long way in converting the tough to the tender.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Mallet
  • Heavy pan
  • Wax paper
  • Marinade
  • Vinegar

Step1
Place the meat between two pieces of wax paper.
Step2
Break the muscle fibers of the meat with a mallet or the bottom of a heavy pan.
Step3
Marinate the meat using a liquid with an acidic base, such as vinegar.
Step4
Allow the meat to soak in the marinade for 3 hours or overnight in the refrigerator. Remove meat from the refrigerator and cook.
