How to Make Beef Potato Saltadas

Beef potato saltadas is a one pot meal from Argentina.You can serve it with a salad without the rice. It's quite filling and nutritious all by itself. This is not a quick and easy meal to prepare, though. You need to watch and stir it throughout while it cooks but as soon as it is hot, it's time to serve it.

Things You'll Need:

  • 1/4 pound of chuck roast per person
  • 1 large potato per person
  • 1 small onion per person
  • 1 medium ripe tomato per person
  • Garlic powder
  • Cayenne pepper
  • Black pepper
  • Salt
  • 1 cup (more or less) cooking oil or olive oil
  • 1 large frying pan
  • 1 large bowl
  • Boiling water
  • Ice water
  • Paper towels
  1. Step 1

    Peel the potatoes and then cut them into sticks like French fries. Place the sliced potato sticks in a bowl with ice water until you are ready to cook them.

  2. Step 2

    Peel and slice the onions into strips about 1/4 inch wide. Set them aside until you are ready to cook them.

  3. Step 3

    Blanche the tomatoes in a pot of boiling water. Then plunge the tomatoes in a bowl of ice water. This will cause the skin to separate from the meat of the tomato. Peel off and discard the tomato skins. Then dice the tomatoes and place them in a bowl until you are ready to cook them.

  4. Step 4

    Trim off and discard any fat from the beef. Slice the chuck roast into thin strips about 1/2 inch thick, 1/4 inch wide, and about 2 inches long.

  5. Step 5

    Heat 1/3 cup of oil in your frying pan. Then pan fry the potatoes until they are soft on the inside and brown and crisp on the outside. Drain away any excess oil and spread the cooked fries on a paper towel which will absorb any remaining oil. Generously sprinkle the fries with garlic powder, salt, and pepper. Add more oil as needed until all of the fries are cooked. Then place all of the cooked fries in the large serving bowl.

  6. Step 6

    Using the same oil and adding more as needed, stir-fry the onion strips until they are soft and brown. Place the cooked onions into the large serving bowl on top of the potatoes. Sprinkle the cooked onions with garlic powder and salt.

  7. Step 7

    Add more oil to the frying pan. Then stir-fry the meat until it is browned and cooked through. While stirring, add more garlic powder along with cayenne pepper and salt. The meat will release some of its juices into the pan. When the meat is just a smidge rarer than you like, toss in the diced tomatoes and bring the mixture to a boil. Pour the meat and tomatoes into the serving bowl on top of the potatoes and onions. Fold the ingredients together gently without allowing the fries to disintegrate. Serve immediately.
