If you love mushrooms and/or you’re just looking for a good, fast appetizer to prepare, here’s an easy one to make.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 2 to 3 cloves chopped garlic
  • A few sprigs of parsley
  • 1 carton of cherry tomatoes
  • 2 tbs. olive oil
  • Soy sauce to taste
  • Black pepper to taste
  • Large portobello mushroom caps (2 pack)
  • 1 package of shredded mozzarella cheese
  • Sauté pan
  • Baking sheet
  • Dash of balsamic vinegar
Step1
Dice and chop the garlic and parsley finely. Then cut the tomatoes in quarters.
Step2
Pour 2 tbs. of oil into the sauté pan and swirl the pan around to evenly distribute the oil across the pan.
Step3
Turn on the stove top to medium heat and preheat the oven to 350 degrees F.
Step4
Toss all the garlic, tomatoes and parsley into the heated pan and sauté together.
Step5
Add a little soy sauce and sprinkle a pinch of black pepper to taste, and stir everything together.
Step6
Sauté the ingredients until everything is cooked. This should only take a couple of minutes, but time varies between different stoves and ovens.
Step7
Rinse the portobello caps and place them on the baking sheet face up.
Step8
Once the sautéing is done, spoon some of the topping onto the inside of the portobello mushroom cap–as much as you can fit on top of it.
Step9
Sprinkle some shredded mozzarella on top, then place the baking sheet with the caps in the oven.
Step10
Bake the caps for 7 to 10 minutes or until the mozzarella has melted and the caps appear golden.
Step11
Remove from the oven and place on a dish. Drizzle some balsamic vinegar on it and serve while still hot. Enjoy!
