How to Make Squash Dressing

Squash dressing is a Southern side dish that is very similar to basic chicken and dressing. It is excellent served alongside fried chicken or baked ham with a side of seasoned green beans. Things You'll Need

  • Six to eight yellow squash (yield approximately 2 cups cooked)
  • 1 cup chopped onion
  • Stick of butter
  • One can cream of chicken soup
  • Two eggs
  • 2 cups cooked cornbread, crumbled
  • Salt
  • Pepper

Instructions

      Cook cornbread for squash dressing according to package directions. Any brand of cornbread mix will work.

      Wash and chop squash and onion.

      Sautee chopped squash, onion and one stick of butter until the squash is soft and onion is translucent.

      Combine cooked cornbread (coarsely crumbled) with one can of undiluted cream of chicken soup, two eggs, squash, onions, and salt and pepper (to taste).

      Transfer mixture to a lightly greased casserole dish.

      Cook in 375 degree oven for 30 minutes or until the top of the casserole is light brown.

Tips & Warnings

  • If the dish appears too dry for your taste you can dilute the cream of chicken soup a bit, or simply add some water.
