  • 1 envelope French onion soup
  • 1/2 onion for each person
  • 1 potato for each person
  • 1 stick butter
  • 2 cups shredded mozzarella or asiago cheese
  • Water
  • Soup pot
  • Fat croutons

Instructions

      Peel and chop your onions and potatoes while a stick of butter is melting in the soup pot over low heat. As soon as the butter is melted, toss in the onions and potatoes and stir them ocassionally for about 10 minutes until the vegetables soften and begin to brown.

      Sprinkle the contents of the envelope of French onion soup over the cooking potatoes and onions. Pour 6 cups of water into the pot and stir until the dried soup is fully incorporated into the mixture. Bring the soup to a boil and turn it down to simmer for about 20 minutes, stirring ocassionally.

      Add 2 cups of shredded mozzarella cheese into the soup. Stir constantly while the cheese is melting. Do not allow the soup to return to a boil so that the cheese will act as a thickener and not separate.

      Ladle the soup into individual serving bowls and top with four or five fat croutons. Serve with home made bread or, for a really fancy meal, in bread bowls which you can buy at many restaurants and bakeries.
