How to Make Pasta with Gorgonzola

For a nice twist on a pasta dish popular in Europe, try warm gorgonzola or quality blue cheese mixed in. Use a long pasta such as spaghetti, linguine or fettucini for best results. Feta works to enhance pasta the same way.

Instructions

Things You'll Need:

  • 1/2 lb. long pasta
  • 1/2 cup gorgonzola or quality blue cheese
  • 1 tbsp. olive oil
  • 1 or 2 cloves garlic, minced
  • 1/2 onion (optional)
  • Large pot
  • Frying pan or skillet
  • Water
  1. Step 1

    Boil pasta as instructed on packaging and drain.

  2. Step 2

    Heat olive oil on medium heat in skillet. Add onions (if using) and saute, stirring, for 10 minutes. Otherwise, scrape in the minced garlic and stir.

  3. Step 3

    After one minute, add boiled pasta to the pan. It's okay if there's a little water still clinging to it. Immediately toss in gorgonzola and stir gently about 5 minutes, until gorgonzola melts into the oil-and-garlic-coated pasta. If you like the blue cheese thinner, you can melt in some butter as well.

  4. Step 4

    Remove from pan and serve with freshly ground pepper. Sprinkle with fresh, chopped parsley if desired.

Tips & Warnings
  • Mushrooms or greens may also be added. Mushrooms should be sauteed before the garlic. Add greens at the end, with the garlic (they wilt quickly).
