Things You'll Need:
- 2 medium-sized, ripe mangoes
-
1 onion
-
2 tablespoons cilantro
-
Salt
-
Pepper
-
1 lime
-
Meat, such as chicken breasts or pork tenderloin
-
Step 1
Pick out 2 medium-sized ripe mangoes. You will know if it's ripe by its softness and how it smells. A ripe mango is very soft to the touch and almost squishy. It will smell very sweet and be turning a pinkish-red color. Peel your mangoes with a knife or peeler. Carefully remove both of the pits and discard.
-
Step 2
Place your mangoes in a food processor and add a dash of salt and pepper to taste. Chop up a medium-sized onion and toss into the food processor.
-
Step 3
Remove cilantro leaves from their stems until you have about 2 tablespoons of the herb. Add to the food processor and stir with a spoon.
-
Step 4
Roll the lime with the palm of your hand to release its juices. Slice in half and squeeze into the food processor. If you like very tangy marinades, use both halves of the lime. If you are sensitive to tangy flavors, just add 1 half.
-
Step 5
Blend the ingredients together in the processor until the marinade is a smooth, orange-ish hue and the ingredients are mixed together fully.
-
Step 6
Remove the lid and spoon the marinade into a good-sized bowl. Add chicken breasts, pork tenderloin, or steak to the bowl and coat all sides of the meat well. You may wish to add a little more salt and pepper to the mixture.
-
Step 7
Cover with plastic wrap and allow the meat to marinate in the refrigerator for 5-8 hours. When it's fully marinated, remove from the fridge and allow the meat to warm to room temperature. Cook on the stove or grill your marinated meat.
