Things You'll Need:
- 2 whole heads of garlic, seperated and peeled
- 4 large white or yellow onions, thinly sliced
- 4 tablespoons extra virgin olive oil
- 2 teaspoons dried thyme
- 6 cups vegetable broth
- 1/2 cup dry white wine
- 1 bay leaf
- 2 tablespoons raw honey
- 4 tablespoons dried basil
- 4 tablespoons dried parsley
- 1/4 teaspoon cayenne pepper
- sea salt and pepper to taste

Step 1
Smash the garlic cloves with a garlic press.

Step 2
In a large pot, saute the onion and garlic in the olive oil until golden brown.

Step 3
Add the thyme, vegetable broth, wine and bay leaf. Bring to a slow boil, reduce heat and simmer for 2 and 1/2 hours.

Step 4
Remove the bay leaf. Strain the liquid and return it to the pot. Add the honey, basil, parsley, cayenne, salt and pepper.

on 7/8/2008 Greatfunmoms...actually I cheat. I have no idea about wines so i just use whatever white wine i can find. Seems to work ok. I have used different ones but it is such a small amount I never really noticed a difference.

on 7/4/2008 Great recipe! Those are ingredients that I use for cooking very often. I dind't know there is a dry white wine, all I know just the liquid wine! Where do you get that?
