Difficulty: Moderately Easy

Things You’ll Need:

  • 4 boneless chicken breasts

  • 1 tsp olive oil
  • 1 (28-oz) can crushed tomatoes with puree
  • 1 tsp crushed dried basil leaves
  • 1 tsp dried parsley flakes
  • ¼ tsp freshly ground black pepper

Step1
Flatten each chicken breast between plastic wrap or waxed paper with a meat mallet until they are even.
Step2
Sprinkle chicken with 1/2 teaspoon of garlic powder. Spray a large skillet with nonstick vegetable cooking spray.
Step3
Heat olive oil over medium heat. When hot, add chicken and cook for 5 minutes until light brown on both sides.
Step4
Add tomatoes, the rest of the garlic powder, basil, parsley, and pepper. Reduce heat to low; cover and simmer for 20 minutes. Once you lower the heat the sauce should start to thicken.

Tips & Warnings

  • Add 1/4 cup of water if sauce thickens too much.
  • Never leave the stove unattended.
