This cheese cake recipe was handed down to me by my grandmother. It is a cheese cake for people who like the taste of cheese cake but do not like the texture of a "all cheese" cheese cake. This one incorporates a cake mix into the recipe so it makes it more cake like in texture.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 9x13 pan
  • 1 pkg of deluxe yellow cake mix
  • 2 Tbl oil
  • 2 pkg (8 oz) cream cheese, softened
  • 1 /2 cup sugar
  • 4 eggs
  • 1 1/2 cup milk
  • 3 Tbl lemon juice
  • 3 Tbl vanilla
  • 1 can cherry pie filling(or any other fruit filling you desire)
  1. Step 1

    Reserve 1 cup cake mix and set aside.

  2. Step 2

    In a large bowl, add remaining cake mix, 1 egg & oil. Mix well (will be crumbly)

  3. Step 3

    Press into the bottom and 3/4 up the sides of a greased 9 x 13 pan.

  4. Step 4

    In the same bowl blend cream cheese, sugar, 3 eggs and the reserved cake mix. Beat 1 minute on medium

  5. Step 5

    Then at low speed add milk and flavorings and mix till smooth.

  6. Step 6

    Pour into crust and bake at 300 degrees for 45-55 minutes

  7. Step 7

    When cool top with desired fruit toppings.

Tips & Warnings
  • My grandmother always thought that when the cake cracked in the middle during baking that it was perfect.
  • Be sure to bake it until it is solid and not jiggling in the center and be sure it is cool before adding topping.
