Difficulty: Moderately Easy
Things You’ll Need:
- 1 1/2 cup sugar
- 1 1/2 cup dark corn syrup
- 1 1/2 tablespoons white vinger
- 3 tablespoons baking soda
- 1/2 to 1 lb of melting chocolate(dark or milk)
- butter (enough to coat pan)
- candy thermometer
- wax paper
Step1
Lightly butter the bottom of a baking pan, for thicker pieces a 9x13 will do for thinner pieces you can use a cookie sheet that has a lip around it so that the candy does not slide off the sheet.
Step2
Combine sugar, syrup and vinegar in heavy sauce pan cook on medium heat. Continue stirring until the sugar dissolves, then cook without stirring until temperature reaches 300 degrees.
Step3
Remove from heat and quickly stir in baking soda, mix well. (it will puff up when you do this)
Step4
Pour into pan do NOT spread, it will do it all by itself.
Step5
Let cool and then break into pieces.
Step6
Melt the chocolate in a sauce pan and dip the pieces in the chocolate. Put on wax paper to cool and harden.

on 5/6/2008 mmmm...this one sounds good too. I've never heard of sponge candy, so, I am definitely going to have to try this one out.
