Here's my recipe for a sweet, decadent treat without all of the calories! These muffins are wheat, egg and dairy free (and still taste great!) You'll rest easy knowing that you won't feel guilty for eating one as a snack or giving them to your kids and their friends. In fact, they'll thank you for it! Does this Spark an idea?

Things You'll Need

  • 1 cup applesauce
  • 1 tsp. canola oil
  • 1/2 cup sugar in the raw
  • 1 tsp. vanilla extract
  • 1/4 tsp. almond extract
  • 3/4 cup oat flour
  • 1/3 cup unsweetened cocoa
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/8 tsp. ground cinnamon
  • 1/2 cup semisweet chocolate chips
  • Small bowl
  • Large bowl
  • 8 paper baking cups or cooking spray
  • Muffin tin
  • Mixing spoon
  • Whisk

Instructions

      Preheat the oven to 350 degrees. Place the paper liners in the muffin tin or coat with cooking spray.

      Combine applesauce, canola oil, sugar, vanilla and almond extract in the small bowl. In the large bowl, whisk together oat flour, cocoa, baking powder, baking soda, salt and cinnamon. Add the applesauce mixture to the flour mixture and stir until blended. Then stir in the chocolate chips.

      Pour batter into the muffin cups. Bake for 20 to 22 minutes, rotating the pan a half turn after about 10 minutes. The muffins are done when the tops are firm to the touch.

      Cool slightly and you're ready to enjoy!

Tips & Warnings

  • Once you combine the wet and dry mixtures, work quickly, as the baking powder and baking soda will be activated.
