If you're looking for a tasty and unusual salad for your next summer picnic, corn salad is absolutely perfect. It's easy to put together, and the vibrant colors of the fresh corn and cherry tomatoes make the salad attractive to look at.

Things You'll Need:

  • Boiling water
  • Corn on the cob
  • 3 tbsp. apple cider vinegar
  • 3 tbsp. extra virgin olive oil
  • Red onions or scallions
  • Fresh cherry tomatoes
  1. Step 1

    Place the corn on the cob in a large saucepan of boiling water, and allow it to simmer for 5 minutes.

  2. Step 2

    Allow the corn on the cob to cool. Then, put it on a cutting board and cut the corn off the cobs with a sharp knife.

  3. Step 3

    Wash the fresh cherry tomatoes thoroughly, and cut them into quarters. Peel and chop the red onions or scallions.

  4. Step 4

    Shake the apple cider vinegar before measuring 3 tbsp. into a small mixing bowl. Whisk in the extra virgin olive oil, red onions or scallions and salt to taste.

  5. Step 5

    Transfer the corn to a large mixing bowl and stir in the cherry tomatoes.

  6. Step 6

    Toss the dressing over the corn and cherry tomatoes. Taste the salad to see if it needs more salt.

Tips & Warnings
  • Add a bit of fresh basil and some freshly ground black pepper if you prefer a more seasoned corn salad.
