How to Assemble Chicken Casserole

Festive chicken casserole with fresh guacamole is a fabulous main dish to serve your guests. It's also easy enough to serve as a weekday favorite to your family. You can assemble it in no time at all. In less than 30 minutes you'll be enjoying a hot, satisfying meal.

Instructions

Difficulty: Easy

Things You’ll Need:

  • Chicken breasts
  • Sauce of sour cream, corn and seasonings
  • 9" x 13" glass baking dish
  • Cooking oil spray
  • Salsa
  • Flour tortillas
  • Shredded cheese

Step1
Cook chicken breasts in water and seasonings until they are done. Let cook, and remove the chicken. Discard the skin and bones, and shred the chicken. If you don't like white meat, use thigh meat, but white meat is traditionally used in chicken casseroles.
Step2
Make your sauce by combining some sour cream, corn and seasonings with the cooked chicken.
Step3
Spray a 9" x 13" inch glass baking dish with canola or vegetable oil spray before assembling the casserole.
Step4
Spread a layer of red or green salsa on the bottom of the baking dish. It's fine to use canned, but your dish will be extra special if you use homemade.
Step5
Cut some flour tortillas in half, and layer them on top of the salsa. Make a single layer, with the tortillas overlapping.
Step6
Spread the chicken sauce on top of the tortillas.
Step7
Top the sauce with shredded cheese. Use a Mexican blend for festive chicken casserole. Keep layering until you get to the top of the dish. Finish with cheese, cover with foil, and you're ready to bake.

Tips & Warnings

  • Cook the chicken, shred it and pop in the freezer. You'll be one step ahead with your casserole assembly.
  • You can garnish this casserole with diced tomatoes and green onions.
