How to Serve an Open-Face Omelette

The open-face, or flat, omelette is the easiest of the omelette variations to serve. This omelette is served like a pizza, which means it can hold more filling and make a heartier meal.

Instructions
  1. Step 1

    Whip eggs together first then stir in prepared vegetables and filling. Pour mixture into the omelette pan, making sure that the pan is hot and greased enough to keep the egg mixture from sticking.

  2. Step 2

    Allow eggs to set up for about 5 seconds, then gently lift the edges of the omelette all around to let the uncooked eggs run to the bottom of the pan.

  3. Step 3

    Stop pushing the eggs to the middle once the mixture has begun to firm. Reduce the heat to keep the bottom from browning too much.

  4. Step 4

    Turn the omelette out onto a heat proof plate then slide the omelette back into the pan. Let this side of the omelette cook for just a couple of minutes.

  5. Step 5

    Serve the omelette on a serving plate. Garnish with cheese. Cut the omelette into wedges for individual servings.

Tips & Warnings
  • You can cook the vegetables and filling first in the skillet over high heat and then pour the egg mixture over them to bind them together.
  • The top side of the omelette can also be browned by placing the skillet in the oven under a broiler.
