Step 1
Ensure the omelette is cooked thoroughly without burning the bottom. Carefully lift the egg mixture while cooking to let the uncooked egg flow through to the bottom. Total cooking time should be no more than 1-1/2 minutes.

Left up the edge of omelette with a spatula to check that the bottom is firm without browning. The top should also be firm.

Slide the omelette out of the pan using the spatula to gently push the omelette without tearing it. Place on the plate for serving.

Score the omelette with your spatula slightly off center. Add any filling that you have prepared onto the larger half. Arrange the filling so that it will be visible once the omelette is folded over. Fold the smaller half over the larger half to make the half moon shape.

Garnish the top of the omelette with cheese, julienne strips of vegetables, sour cream or cheese.
