How to Make an Open Face Omelet

Gourmet chef Julia Child once characterized an omelet as a bunch of soft-cooked scrambled eggs wrapped up in an envelope of more firmly cooked scrambled eggs. There are many kinds of omelets, and this is a variation on the Spanish version, which includes a meat filling, toppings and a dash of smoky cumin.

Things You'll Need:

  • 3 large eggs
  • Salt
  • Freshly ground pepper and cumin
  • Green onions
  • Green and yellow bell peppers
  • Tomato
  • Garlic
  • Ground beef
  • Sour cream
  • Lettuce
  • Cilantro
  • Monterey Jack cheese
  • Red onion
  • Olive oil
  1. Step 1

    Break each egg into a small ramekin, and then transfer one at a time to a medium sized bowl. Beat the three eggs together with a fork or small whisk.

  2. Step 2

    Slice 1/2 cup of green onions and peppers for garnish. Set aside. Dice 1/2 cup of tomato. Shred together a quarter head of lettuce and a handful of fresh cilantro.

  3. Step 3

    Saute 1/2 cup of diced red onion in 2 tbsp. of olive oil in a large skillet over medium heat for three minutes. Add 1 pound of ground beef. Break up the ground beef. Stir and cook until the meat is browned.

  4. Step 4

    Melt 1/2 tbsp. of butter in an 8 inch omelet pan over medium heat. Add the beaten eggs. Allow the egg to cook for about 45 seconds and then gently move the eggs around with a rubber spatula, allowing the uncooked portion to move to the bottom of the pan.

  5. Step 5

    Add a 1/2 tsp. of butter under the edge of the omelet at either side. Flip the omelet quickly and then transfer to a plate.

  6. Step 6

    Top the omelet with 1/2 cup of the meat mixture. Add a handful of the lettuce and cilantro. Garnish with diced green onions and bell peppers.

  7. Step 7

    Finish the omelet with a generous dollop of sour cream. Grate Monterey Jack cheese over the top. Serve immediately.

Tips & Warnings
  • Practice flipping a piece of bread in the omelet pan. Use the wrist and the curve of the pan to flip the bread. Practice until you can do it without "spilling" the bread..
