How to Serve Super Lasagna and Caesar Salad

If you want to serve a special dinner combination, start with a Caesar salad and follow with lasagna for the main course. Lasagna is equally at home at formal or informal gatherings. These recipes serve 12, but you can reduce the ratio of ingredients for smaller meals.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Large salad bowl
  • Wire whisk
  • 1 tbsp. fresh lemon juice
  • 1/2 cup fresh grated Parmesan cheese
  • 1 tsp. Worcester sauce
  • 1 tbsp. white vinegar
  • 3 crushed garlic cloves
  • 2 eggs yolks, lightly beaten
  • 3/4 tsp. minced anchovy fillet
  • Cracked pepper to taste
  • 9 tbsp. olive oil
  • 2 or more heads romaine lettuce
  • 1 medium onion
  • 2 garlic cloves
  • 1 lb. sweet Italian sausage, casings discarded
  • 2 (28 oz.) cans of whole tomatoes in juice
  • 1 tsp. salt
  • Black pepper to taste
  • 1 egg
  • 16 oz. Ricotta cheese
  • 1 lb. shredded mozzarella cheese
  • 1/4 cup fresh grated Parmesan cheese, or more to taste
  • Medium bowl
  • 1/4 tsp. salt
  • Black pepper to taste
  • Dash of nutmeg
  • 1/3 cup parsley, minced
  • 1 lbs. uncooked lasagna noodles
  • 15 by 9 inch baking dish
  • 1 1/2 cups shredded mozzarella, or more to taste

Make the Caesar Salad

Step1
Chill the bowl and the whisk first. This helps the dressing hold together.
Step2
Whisk together the lemon juice, white vinegar, 2 tsp. Worcester sauce, crushed garlic, eggs, minced anchovy and pepper in the chilled bowl. Add olive oil. Whisk all the ingredients together in the bowl.
Step3
Add the lettuce and toss until dressing coats all of the lettuce. For best results, serve this salad immediately after tossing.

Make Lasagna Sauce

Step1
Preheat the oven to 350 degrees to Fahrenheit. Heat the oil over moderately high heat in heavy, 5 to 6 quart pot.

Sauté the onion until it's golden, stirring often. Add the garlic and sauté for 1 more minute.
Step3
Add the sausage, breaking up the large pieces. Keep stirring as the sausage browns, about 5 minutes.
Step4
Chop tomatoes and add them to the pot along with their juice. Add salt and pepper to taste. Simmer the sauce for 30 minutes, until it's thick and the flavors have developed.
Step5
Remove from the heat.

Make the Cheese Mixture

Step1
Beat the egg lightly. Stir together beaten egg, ricotta, mozzarella and Parmesan in a medium bowl.
Step2
Add salt, pepper and nutmeg.
Step3
Fold in the parsley.

Assemble and Bake the Lasagna

Step1
Boil lasagna noodle according to package instructions. Drain into a medium bowl.
Step2
Pour 2 cups of sauce into your baking dish. Layer in half the lasagna noodles, half the remaining sauce and all of the cheese mixture. Top with the remaining lasagna, sauce and additional mozzarella.
Step3
Cover and bake for 45 minutes.
Step4
Uncover and bake for 15 more minutes.

Tips & Warnings

  • Let the lasagna stand for 10 minutes before serving.
