If you are making a lasagna, you may want to include vegetables that will blend in with the meal. These veggies should have the texture, consistency, flavor and color to complement your main dish.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Various vegetables
  • Olive oil
  • Meat (optional)
  • Lasagna noodles
  • Additional seasonings
  • Sauces or cheese (optional)
  1. Step 1

Chop your vegetables into small pieces. Zucchini, eggplant, fennel, mushrooms and colorful peppers are excellent choices for this dish. Keep the pieces small so they will fit into the lasagna mix.

  2. Step 2

Heat olive oil in a pan over medium heat. When it starts crackling, pour your vegetables into the pan and continually stir them with a spoon to keep them from burning or getting to mushy. Add any additional seasonings.

  3. Step 3

Simmer your vegetables until they are golden brown, but still crunchy. They will cook more when you put the mix together into the oven.

  4. Step 4

Mix the vegetables with your meat or other ingredients in bowl. Lay your lasagna strips in a large baking pan and start to layer your vegetable and meat mix in between the pasta.

  5. Step 5

Add any additional sauces or cheeses while layering. Cook in the oven for 20 to 30 minutes at 350 degrees.
