How to Prepare Lemon Oil for Linguine

After you've started cooking your linguine to serve it with shrimp and capers, the next step is to make the lemon oil. Lemon oil adds flavor to the pasta without weighing it down with a heavy sauce.

Instructions

Things You'll Need:

  • Lemon
  • Lemon zester or grater
  • 1 cup olive oil
  • Mixing spoon
  • Mixing bowl
  1. Step 1

    Rub the lemon against a zester or grater to remove the outer, yellow layer. Stop before you get to the white, bitter layer of the lemon.

  2. Step 2

    Add the lemon rind to the mixing bowl. If you are a citrus lover, use the rind from more than one lemon.

  3. Step 3

    Add 1 cup of olive oil to the lemon rind in the mixing bowl. If you prefer a flavor that is less strong, use regular olive oil. If you want a more full bodied flavor, use extra virgin olive oil.

  4. Step 4

    Stir the lemon rind and olive oil together and set the bowl aside until you are ready to add it to the pasta. The longer you let the lemon rind and olive oil sit, the stronger the flavor.
