How to Serve Italian Salmon With a Salad

A fresh tossed green salad with homemade vinaigrette dressing is a perfect accompaniment for savory Italian salmon. Serve some hot pasta on the side and a bottle of wine, and you've got an unforgettable gourmet dinner.

Instructions

Things You'll Need:

  • Italian salmon
  • Leafy greens, such as radicchio, arugula, endive or romaine
  • 1 cup extra virgin olive oil
  • 1/2 cup balsamic vinegar
  • 1 to 3 cloves fresh garlic, finely minced
  • 1 tsp. fresh basil, chopped
  • 1 tsp. dried oregano
  • 1/4 tsp. freshly ground pepper
  1. Step 1

    Put the extra virgin olive oil, balsamic vinegar, minced garlic, fresh basil and dried oregano in a small mixing bowl. Whisk the ingredients together until the dressing is completely blended.

  2. Step 2

    Place the hot Italian salmon on a serving plate, and put a mound of fresh leafy green salad on the plate along with the salmon.

  3. Step 3

    Drizzle a bit of the freshly made salad dressing over the leafy green salad.

  4. Step 4

    Grind some fresh peppercorns over the top of the leafy green salad.

  5. Step 5

    Serve the Italian salmon and fresh leafy salad immediately. Put the extra salad dressing and the pepper grinder on the table in case your guests want to add more dressing or freshly ground pepper.

Tips & Warnings
  • Save some time by placing the salad dressing ingredients in a glass jar with a tightly fitting lid. Shake the jar well to blend the ingredients.
  • Red wine vinegar or white wine vinegar can be substituted for balsamic vinegar, but the balsamic has a darker, richer taste.
