  1. Step 1

Hold a head of garlic sideways on a cutting board. Apply pressure to the head with the palm of your free hand until the cloves break loose.

  2. Step 2

Separate the cloves from the garlic paper. Choose the largest clove of garlic and set the others aside for later use.

  3. Step 3

Use a chef's knife to cut off the bottom of the garlic. Lay the knife on the clove sideways. Press on the knife with a rolling motion to crush the clove.

  4. Step 4

Peel the paper away from the clove. Lay the clove on the cutting board and discard the garlic paper.

  5. Step 5

Dice the garlic using the chef's knife. Rock the knife back and forth as you cut through the clove.

  6. Step 6

Push the diced garlic into a pile. Dice it into smaller pieces by rocking the knife through the garlic a second time. Continue to regroup the garlic bits and cut them to the desired consistency.

  7. Step 7

Gather the diced garlic into a pile with the knife. Slide the garlic into a small bowl and set it aside until you are ready to season the salmon.
