How to Adjust the Speed of a Stand Mixer

Stand mixers have variable speeds that you can adjust according to your recipes. Before you operate your stand mixer, learn what the speeds are for and how to adjust them, so that your next dish comes out as planned.

Instructions
  1. Step 1

    Find the lever on the side of your stand mixer This is your speed control. Each mixer will be a bit different so check your owner's manual for the exact location of the speed lever or dial.

  2. Step 2

    Examine the numbers starting at 1 and going up to however many speeds your stand mixer has. So if you stand mixer is 12-speed you will see numbers 1 through 12 here.

  3. Step 3

    Note that each speed is for a different purpose, including blending, stirring, pureeing items and beating egg whites, which is usually the highest speed on the stand mixer.

  4. Step 4

    Move the lever to the number 1 position and observe how the stand mixer operates. The beater should be turning slowly within the bowl. This is where you always want to start.

  5. Step 5

    Adjust the speed of the stand mixer by moving the lever to the number 2 position. The beater will increase in speed.

  6. Step 6

    Progress through the speeds. Go up one speed at a time until you reach the speed required for your recipe. Never jump to a certain speed and stop progressing if the mixture is getting out of control.

  7. Step 7

    Stop the stand mixer by moving the speed lever down one at a time until you come to the "Off" position. Adjust your mixer each time you use it to the desired speed of the recipe you are preparing.
