How to Make a Breakfast Crepe

If you're having guests over for breakfast or brunch, surprise them with a fresh, hot breakfast crepe that will start their day out just exactly right. Provide a variety of fillings and each guest can order up their favorite delectable breakfast crepe.

Instructions

Things You'll Need:

  • Crepe batter
  • Butter or olive oil
  • Scrambled eggs
  • Grated cheddar cheese
  • Grated mozzarella cheese
  • Freshly grated mozzarella cheese
  • Chopped ham, sausage or bacon
  • Fresh mushrooms, sliced
  • Tomatoes
  1. Step 1

    Preheat the crepe pan, and rub it with butter or olive oil. Pour crepe batter onto the hot pan, and rotate it to spread a thin layer of batter evenly over the pan.

  2. Step 2

    Allow the crepe to cook for about a minute, and then use the spatula to flip it over.

  3. Step 3

    Cook the crepe for another 15 to 20 seconds, and then start piling on fillings.

  4. Step 4

    Start with a layer of shredded cheese. Add chopped ham, bacon or sausage, or a combination. Top the crepe with scrambled eggs. Be sure that all of the ingredients are equally spread over the crepe.

  5. Step 5

    Add any other fillings of your choice, such as chopped tomatoes or sliced mushrooms.

  6. Step 6

    Fold the crepe over one side at a time, as if forming an envelope. Start with the left side, and work your way around to the top.

  7. Step 7

    Sprinkle a little more cheese over the top of the crepe, and add some tomatoes for color. Place the crepe in a warm oven long enough to melt the cheese. Serve the crepe hot.
