Instructions

    • 1

Coat the preheated crepe pan with butter. Preheat the oven to 275 degrees.

    • 2

Pour the batter into the hot crepe pan, tilting the pan so that the surface is lightly covered.

    • 3

Cook the crepe for about 1 minute. Use the spatula to loosen the edges, before flipping the crepe over. Cook the other side until it turns light brown, about 15 to 20 seconds.

    • 4

Grate cheddar cheese over the top of the crepe, and spread it evenly. Drop a handful of chopped ham over the cheese and distribute it equally over the crepe. Spread a large spoonful of scrambled eggs over the ham.

    • 5

Fold the left side of the crepe over, followed by folding the bottom of the crepe up. Fold the right side of the crepe over and fold the top down as if it were an envelope.

    • 6

Use the spatula to remove the crepe from the crepe pan. Sprinkle a thin layer of grated cheddar cheese over the top and garnish with a few chunks of chopped tomato.

    • 7

Slide the crepe into the preheated oven. Leave it just a few minutes to blend the flavors and melt the cheese, and then remove the crepe from the oven. Serve the savory crepe hot.
