Buy fresh, brightly colored parsley. Broad-leafed parsley is the type usually used for pizza bread. To store it, first rinse it, wrap it in paper towels and keep it in a plastic bag in your refrigerator. Parsley should last about a week.

Pull the stems of the parsley away from the leaves one at a time and separate them. Make sure you remove any wilted or yellow leaves. If you're in a hurry and you don't mind having a few stems mixed in, then you can gather the leaves into a tight bunch and cut the stems away with a knife.

Place your parsley leaves in a bunch and slice them by rocking the blade of your knife through them. Use your other hand to steady and push the blade. Use a large chef's knife with a curved blade for slicing parsley.

Slice your parsley in different directions. The more directions you slice in, the smaller your pieces will be. For pizza bread, you probably want smaller pieces to distribute the flavor.

Gather the chopped parsley in a bowl. Set it aside until you are ready to add it to the pizza bread.
