How to Cut Tomatoes for Bruschetta

Bruschetta, an Italian appetizer, is toasted bread topped with freshly-cut tomatoes combined with garlic, basil, olive oil, salt and pepper. The name derives from the Italian word "bruscare" which means "to roast over coals."

Tips & Warnings
  • Tomatoes should be soft, heavy and yield a bit to the touch. Size is no indicator of a tomato's taste or quality; small tomatoes can be just as delicious as larger ones.
  • Although tomatoes are available year round, summer is the true tomato season. Consider using canned tomatoes for your cooking during non-summer months.
  • Never buy tomatoes from a refrigerated grocery store shelf and do not refrigerate tomatoes at home. Temperatures below about 55 degrees leave a tomato less flavorful and give it an unappetizing, mealy consistency.
