Difficulty: Moderate
Instructions

Things You'll Need:

  • 6-inch or 8-inch foccacia bread
  • 3/4 cups prepared bean mixture
  • Rubber spatula
  • 3 tbsp. carmelized onions
  • 3 tbsp. carmelized red peppers
  • Freshly grated Parmesan cheese
  • 3 tbsp. red pepper, cut into chunks
  • Sharp knife
  • Serrated knife
  • Serving tray
  • Dried marjoram (to taste)
  • Fresh basil, chopped (to taste)
  • Olive oil
  1. Step 1

Pre-heat the oven to 450 degrees. Spread the hot bean mixture evenly over the focaccia bread with a rubber spatula.

  2. Step 2

Sprinkle carmelized onions and peppers over the top and finish with some freshly grated parmesan cheese.

  3. Step 3

Bake the focaccia bread in the pre-heated oven for 12 minutes. Remove the bread and set it aside to cool.

  4. Step 4

Stack several fresh basil leaves on a cutting board and roll them into a tube shape. Chop the leaves finely. Reserve a few large, unchopped leaves for garnish.

  5. Step 5

Place the cooled focaccia bread on the cutting board and use the serrated knife to cut it into quarters. If you're using larger, 8-inch focaccia, slice the quarters in half.

  6. Step 6

Place the focaccia wedges on the serving tray and tuck a few whole basil leaves around the edges for garnish. Top the wedges with chopped basil, chunks of red pepper, and a sprinkling of dried marjoram. Drizzle a bit of olive oil over the top and serve.
