How to Crimp Pot Sticker Wrappers

Pot stickers are a Chinese appetizer that consist of fried, steamed or boiled stuffed dumplings. They're served with a dipping sauce and are easy to make at home. Follow these easy steps to crimp pot sticker wrappers, and enjoy these tasty treats at home.

  1. Step 1

    Buy pot sticker wrappers at an Asian or regular grocery store. They're round and thicker than wonton wrappers. Some people prefer using Japanese gyoza wrappers or making their own.

  2. Step 2

    Stuff your pot sticker wrappers with about a tablespoon of filling and seal them. Make sure you've moistened the edge of one side of the wrapper before folding. You can make fillings with either meat and vegetables or just vegetables only. Mix soy sauce and rice vinegar to make dipping sauce.

  3. Step 3

    Use egg whites in addition to water to moisten the edge of the wrapper before you seal if you have problems with them popping open during cooking. The edges of the wrapper at the points where they've been folded are the most vulnerable spots for popping open.

  4. Step 4

    Force the air from your pot sticker while pressing the edges together. Stuff your pot stickers before you begin folding them, but practice by stuffing and folding the first one so you'll know the correct amount of stuffing to use.

  5. Step 5

    Choose a fork for crimping your pot stickers. Use only the top quarter inch of the prongs and press around the seal of your pot stickers. This step will help the edges adhere and make your pot stickers appealing to the eye.

Tips & Warnings
  • Use a nonstick pan for frying pot stickers unless you want them to stick to the pot. A 10- to 12-inch pan with a lid works best.
  • Don't let the wrappers dry out too much while stuffing and folding them, or you may find it difficult to seal the pot stickers. Wrap a moist, not damp, paper towel around the wrappers to keep them moist.
