How to Make Vegetarian Mayonnaise

If you've decided that a vegetarian diet is the best way to go, that doesn't mean you have to give up all of your favorite foods. Vegetarian mayonnaise may be free of animal products, but it's packed full of flavor. Give it a try and you may be pleasantly surprised.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 1 1/2 cups soy milk
  • 1 1/4 cup olive oil
  • 2 cups safflower oil
  • 1/4 tsp. dry mustard
  • 1/8 tsp. hot sauce
  • 3 tbsp. apple cider vinegar
  • 1 tbsp. honey
  • Juice of one fresh lemon
  • 1 1/2 tbsp. sea salt
  • Freshly ground black pepper

Step1
Place the soy milk in a blender or food processor and gradually add the safflower oil and extra virgin olive oil until the oils are completely blended.
Step2
Pour the blended oils into a large mixing bowl. Add the dry mustard, hot sauce, apple cider vinegar, honey and lemon juice and whisk until the ingredients are incorporated.
Step3
Stir in the sea salt and freshly ground pepper to taste.
Step4
Place the vegetarian mayonnaise in a sealed container and store it in the refrigerator for up to a week.

Tips & Warnings

  • Give the vegetarian mayonnaise a bit more zing by replacing the dry mustard with a 1/4 tsp. of Dijon mustard.
  • If you like tofu, substitute some tofu of the silken variety in place of the soy milk. The mayonnaise will be slightly thicker and very creamy.
  • Be sure to add the oils very slowly. Otherwise, the oils can separate.
