How to Braise Chicken

Braising is a very versatile method cooking chicken, with many variations on the theme. Once you master the basic technique, you can try out any number of excellent recipes. Braised chicken is moist and juicy, and is delicious served either hot or cold.

Things You'll Need:

  • Chicken, cut into pieces
  • Vegetable oil
  • Liquid, according to recipe
  1. Step 1

    Rinse the chicken in cool running water, one piece at a time. Pat the pieces dry with paper towels.

  2. Step 2

    Heat the vegetable oil over medium-high heat in a large, heavy saucepan or dutch oven. Place the chicken pieces in the hot oil, in a single layer, and don't crowd them too closely together.

  3. Step 3

    Fry the chicken for about 7 to 10 minutes. Turn them over and fry the other side until both sides are golden brown. Remove the chicken with a slotted spoon or tongs and set them aside while you fry any remaining chicken.

  4. Step 4

    Add liquid, such as broth, wine, juice or water to the pan according to the recipe directions. Stir in salt and pepper, and any extra herbs or spices, such as rosemary or thyme. Turn the heat to high until the liquid boils.

  5. Step 5

    Lower the heat and cover the pan. Simmer the liquid for about 15 minutes, or according to the recipe.

  6. Step 6

    Add the chicken pieces to the ingredients in the saucepan and simmer for about 45 minutes, or as the recipe directs. Turn the chicken about every 10 to 15 minutes, and add more liquid if the chicken seems to be getting too dry.
