Things You'll Need:
- 2 cups butter, softened
- 1 cup confectioners sugar, sifted
- 2 tsp. vanilla extract
- 2 tsp. pure vanilla extract
- 4 cups all purpose flour
- 1/2 tsp. salt
- 2 cups slivered almonds or finely chopped walnuts

Step 1
Preheat the oven to 350 degrees.

Place the softened butter in a large mixing bowl and mix it on medium speed until it's creamy. Blend in the almond extract and pure vanilla extract.

Turn the mixer on low and add the sifted confectioners sugar. Once the confectioners sugar is moistened, turn the mixer on medium speed and mix until blended.

Add a small amount of the all purpose flour, and blend. Continue adding the flour very gradually, mixing until the batter is thick and creamy. Stir in the slivered almonds or chopped walnuts.

Set the dough in the refrigerator to chill for at least an hour. Remove the chilled dough and use your hands to shape it into balls the size of a large walnut.

Place the cookies on an ungreased baking sheet, leaving about an inch between each cookie, and bake them until they turn golden brown, 12 to 15 minutes.

Remove the cookies from the cookie sheet and allow them to cool completely on a wire rack. Put some powdered sugar in a shallow dish, and roll the Mexican wedding cookies in the powdered sugar.
