1
Remove and discard the papery outer layer of the onion. Wash the onion under running water to remove any dirt, especially if you just picked the onion from your garden.
-
2
Carefully cut off the root end of the onion first. Turn the onion around and cut off the top. Trim off any blemishes or green spots that remain.

3
Set up your cutting board. To keep it from moving on the countertop, place a kitchen towel or damp paper towel under it.
-
4
Prevent the onion from rocking or rolling while you slice it. Slice off a thin section of the fattest part of the side of the onion if you want full slices. Or you can cut the onion in half and slice it that way.
-
5
Place the side of the onion you just trimmed onto the cutting board. Begin at the top of the onion.
-
6
Hold the chef's knife in your dominant hand. Keeping the tip of the knife on the cutting board, you are ready to slice the onion. Use your non-dominant hand to push the onion under the chef's knife while you work the knife in an up and down motion. Be careful to keep your fingers out of the way. Slice pieces of onion in the thickness you desire.
