Difficulty: Moderate
Instructions

Things You'll Need:

  • 1 1/2 lbs. ground beef or ground turkey
  • 2 cups Italian seasoned bread crumbs
  • 2 large eggs
  • 1 tbsp. fresh basil, chopped
  • 3 tbsp. ketchup
  • 1 tsp. parsley
  • 1 garlic clove, minced
  • Green olives with pimentos
  • 1 jar of spaghetti sauce
  • 1 package of spaghetti noodles
  • 1 tbsp. extra virgin olive oil
  1. Step 1

Place the ground beef or turkey in a large mixing bowl and stir in the Italian bread crumbs, eggs, ketchup, minced garlic, parsley and chopped basil. Mix until the ingredients are thoroughly blended.

  2. Step 2

Use your hands to shape about 25 to 30 small meatballs. Push one olive half into each meatball, with the cut side out so the pimento shows.

  3. Step 3

Arrange the eyeballs in a baking dish and pour spaghetti sauce over the top. Put the pan in the preheated oven and bake the eyeballs for about 45 minutes.

  4. Step 4

Begin cooking the spaghetti after the eyeballs have been cooking for about 30 to 35 minutes. Cook it in boiling water for about 11 minutes, or as directed on the package.

  5. Step 5

Drain the spaghetti in a large colander, rinsing it with cool water. Mix it with a bit of extra virgin olive oil and place the spaghetti in a large serving bowl, or on a serving platter.

  6. Step 6

Spoon the hot spaghetti sauce over the noodles.

  7. Step 7

Remove the eyeballs from the oven, and arrange them on top of the spaghetti, with the eyeballs facing out.
