How to Make Vegan Fruit Slices

These delicious, chewy fruit slices are full of vitamins A and C and iron and pack a healthy serving of fiber. The natural sugars make them a great energy snack, too. This recipe contains no animal products and so is a perfect addition to the vegan diet.

Things You'll Need:

  1. Step 1

    Pit the dates. Cut the figs and dates into fine slices.

  2. Step 2

    Remove the pits from the prunes and cut them into quarters. Place the prunes and raisins in a food processor. Pulse to a fine chop.

  3. Step 3

    Press the lemon between the palm of the hand and the work surface. Roll the lemon back and forth a few times to release the juice. Cut the lemon in quarters and squeeze the juice into a small, non-reactive bowl.

  4. Step 4

    Place all the dried fruit in a bowl. Add lemon juice and pour over the fruit. Add vanilla extract.

  5. Step 5

    Mix the fruit and lemon juice well. Spread the mixture evenly over a parchment-lined baking sheet. Cover with plastic wrap.

  6. Step 6

    Refrigerate for 4 to 5 hours. Remove from the fridge and cut into slices 1 by 2 inches. Store in the fridge in an airtight container.

  7. Step 7

    Vary the recipe with dried apricots, cherries, cranberries or pears. Use orange or coconut extract with chopped mango and papaya.

Tips & Warnings
  • Vegan fruit slices travel well in a lunchbox or backpack for several hours. For longer periods, refrigerate them.
  • Use golden or dark raisins, or a combination.
