How to Crisp a Chicken

Crisping the chicken is a vital part of making the traditional French dish, chicken in a pot (poule au pot). Before you put the chicken in the oven, it needs to be seasoned and browned on the stove.

  • Oven
  • Pot
  • Whole Chicken
  • Paper Towels
  • Spices
  1. Step 1

    Create the mixture that will give the chicken its texture. Pour olive oil and butter into a pot and heat on medium until they melt together. When properly mixed, the combination should have a rich brown color and smell delicious. Swirl the mixture around in the bowl to make sure the entire pot is covered and replace the top.

  2. Step 2

    Pat the chicken down with paper towels. This makes it easier for spices to stick to the bird.

  3. Step 3

    Season the chicken with herbs and spices. Sprinkle salt, pepper, rosemary and thyme onto each side of the chicken. Pat the chicken down with the spatula to make sure the spices are absorbed.

  4. Step 4

    Place the chicken topside down into the pot and cook it for 3 to 4 minutes. It is important you keep the lid on the pot while cooking. This will help it cook faster and make it taste better.

  5. Step 5

    Flip sides after 3 or 4 minutes. Put the lid back on after each time to help seal in the flavor. Your chicken should have a rich brown coating. The crisped chicken is now ready to transfer into the oven.
