Things You'll Need:

  • Toasted English muffins
  • Seared tomato slices
  • Breakfast potatoes
  • Poached eggs
  • Florentine sauce
  • Salt and pepper to taste
  • Parsley (optional)
  1. Step 1

    Place two halves of a toasted English muffin on a plate. Top each muffin half with a slice of seared tomato.

    Arrange a serving of hot breakfast potatoes or hash browns to the plate.

    Use a slotted spoon to remove a poached egg from the cooking water and place the egg on top of one of the seared tomato slices. Repeat for the second poached egg and the other tomato slice.
