Things You'll Need:
- Toasted English muffins
- Seared tomato slices
- Breakfast potatoes
- Poached eggs
- Florentine sauce
- Salt and pepper to taste
- Parsley (optional)

Step 1
Place two halves of a toasted English muffin on a plate. Top each muffin half with a slice of seared tomato.

Arrange a serving of hot breakfast potatoes or hash browns to the plate.

Use a slotted spoon to remove a poached egg from the cooking water and place the egg on top of one of the seared tomato slices. Repeat for the second poached egg and the other tomato slice.

Spoon florentine sauce over each poached egg on the plate. Season the eggs florentine with salt and pepper to taste
