Crepes are a delicious and light French pancake that you can make into a sweet or savory dish, depending on what you select for the topping or filling. Many people think they don't have the culinary skills to make crepes; as they are traditionally thin and very delicate. Most American pancakes are much thicker. Pouring crepe batter onto the grill isn't as hard as you think, and with a few simple techniques, you can transport yourself to a street fair in Paris - right in your own kitchen.

Instructions

Things You'll Need:

  • Grill pan
  • Ladle
  • Crepe batter
  • Butter
  • Spatula
  • Fork
  • Serving plate
  • Toppings (optional)
  1. Step 1

Make the batter and double check its consistency. The batter should be light and very thin. Let it rest for 5-10 minutes before pouring.

  2. Step 2

Heat your pan, griddle or grill and add a little butter or non-stick spray. Once the pan heats enough to melt the butter, it's time to pour the crepe batter; a traditional ladle is about the right size, but you may have to make a few crepes before you can determine the perfect amount of batter to use.

  3. Step 3

Ladle out the batter in the center of the pan and then either twirl the pan or use the back of the ladle to smooth out the batter, working in a circular pattern from the center of the crepe. Once you've smoothed the crepe as thin as possible, let it cook for a moment.

  4. Step 4

Check for doneness by lifting up on the edge of the crepe. If it lifts up easily, it is time to turn the crepe. Flip the crepe with a spatula and quickly cook on the second side for 20 to 30 seconds. A perfect crepe should be light brown on both sides.

  5. Step 5

Use a fork to grab the edge of the crepe, then quickly pull off the rest and place on a plate. Continue pouring the batter until you've made all of your crepes, then top with anything from scrambled eggs to sugar for a mouth-watering snack or meal.
