Step 1
Cut the garlic clove in half. Rub the clove over the bread surface to add a flavoring of garlic to the finished dish. This gives a hint of the garlic flavor without the strong garlic flavor. Rub the clove over the slice of Italian bread both before and after toasting it to make sure there is enough flavor to blend with the dish

Step 2
Use a garlic press to get all the juice from the clove before pressing out the small crushed garlic pieces. Add the juice and bits of garlic to the topping that will be topping the bread. Allow the topping mixture to rest in the refrigerator for about 1/2 hour prior to topping the bread. This will have a strong flavor of garlic and will be great for garlic lovers in the crowd.

Step 3
Bake a head of elephant garlic in the oven and then scoop out the soft meat of each clove. Add this to the bruschetta topping and stir well. This is a milder tasting way to introduce garlic into the recipe. It doesn't have the harsh bite of the fresh garlic and adds a complexity of smokiness to the flavors of the topping.
