How to Cut Onions for Bruschetta

Bruschetta is a low fat Italian appetizer made with a mixture of tomatoes, onions and garlic and olive oil set atop a toasted bread called Crostini. When preparing the onions for Bruschetta, you have to cut them in small pieces. If you cut the pieces too large or too thick, the flavor of the onion will completely overpower the other flavors. Here's how to cut onions for Bruschetta.

Things You'll Need:

  • Large knife
  • Cutting board
  1. Step 1

    Cut a medium sized onion in half. You need about 1/4 cup of onion for the Bruschetta, which is about half a medium sized onion. Having the onion cut in half also allows for easier cutting because it won't roll around as you are trying to slice it up.

  2. Step 2

    Begin slicing the onion. Lay the onion flat side down on your cutting board. Then take your knife and begin cutting thin slices from the top of the onion. Continue slicing the rest of the onion this way.

  3. Step 3

    Gather the sliced pieces so they are all lying horizontally on the cutting board in front of you. The tops and bottoms don't have to match up here, they just all need to be lying in the same direction.

  4. Step 4

    Mince the onion slices. Hold a large knife vertically in relationship to the onion. Begin mincing the onion by lifting up the back of the knife while keeping the tip of the knife on the cutting board. Pivot the back of the knife as you cut.

  5. Step 5

    Choose a new pivot point. As parts of the onion get minced, you need to move the knife to where the onion is not yet minced, making that your new pivot point and begin mincing again as described in Step 4.

Tips & Warnings
  • Scrape the onions together as you cut. The onions will spread out as you mince them up, simply gather them together in a pile and begin mincing again.
  • Avoid mincing too quickly. If you've never used this knife technique for chopping, go slow until you get the hang of it to avoid cutting yourself.
