Just about everybody likes enchiladas and there are many different ways to make them. To spice up the taste, we add hot sauce or jalepenos.

For those who cannot tolerate spice, I've devised a simple Chicken Enchilada recipe
that tastes so good you won't even miss the heat.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 medium can enchilada sauce
  • 3 cans of chunked chicken
  • 4 cups of shredded cheddar cheese
  • 20 fajita sized tortillas
  1. Step 1

Put canned chicken in a large bowl and mix with 1/2 cup enchilada sauce.

  2. Step 2

Roll chicken mixture into tortillas, and add some cheddar cheese from bag.

  3. Step 3

Roll up like a burrito. Place in a 13x9 baking dish, liberally sprayed with Pam.

  4. Step 4

After all tortillas are rolled, take a tablespoon and spread enchilada sauce lightly on each enchilada. Sprinkle top liberally with cheddar cheese.

  5. Step 5

Bake at 375 degrees for 25 minutes.

Tips & Warnings
  • To ensure fresher enchiladas, roll only amount needed for each meal.
  • Place baking dish on the top shelf for a crunchier top
  • If you like, you can roll tortilla in small amount of sauce and then roll.
  • Avoid over baking as cheese will burn if left too long in the oven.
