Easy-to-make peanut butter and chocolate chip cookies!

These cookies made from peanut butter and chocolate chips will be a favorite! Peanut butter spread between two Ritz crackers and covered with melted chocolate chips, the perfect mix of sweet and salty!

Instructions

Things You'll Need:

  • Ritz crackers
  • creamy peanut butter
  • chocolate chips
  • knife
  • double-boiler
  • pot holder
  • tongs
  • cookie sheet
  • waxed paper
  1. Step 1

    Cover the cookie sheet with waxed paper.

  2. Step 2

    Melt the chocolate chips in the double boiler. Remove the insert from the double boiler and place on a pot holder on the counter.

  3. Step 3

    Spread peanut butter on a Ritz and top with another cracker.

  4. Step 4

    Dip the sandwich in the melted chocolate chips. I use small olive tongs to do this (carefully so I don't break the cracker), but if you don't have olive tongs, you can use regular-sized ones.

  5. Step 5

    Place the cookie on the cookie sheet. When you have finished as many cookies as you want to make, place the cookie sheet in the fridge until the chocolate hardens.

Tips & Warnings
  • It's difficult to get an even coat of chocolate, don't go for perfection! It will even out a little as it cools.
  • You may need to rewarm the chocolate if it cools off and gets too thick.
  • The chocolate will be hot, be careful not to burn your fingers!
