Step1
For a light, fluffy meatloaf, use coarsely ground meat.
Spoon the mixture into the pan and do not pack it down.
Using finely chopped ingredients will make a dense loaf.
Use ground beef, pork, ham, or veal, or combine two or more meats.
**Basic meatloaf**
To one pound of ground meat, add 1 cup of loosely packed bread crumbs soaked in 1/2 cup of milk or broth with 1 beaten egg. Add 2 tablespoons of minced onion, 1 teaspoon of salt, 1 teaspoon of prepared mustard, and 3 tablespoons of ketchup; blend well.

Place in a meatloaf pan (or deep roasting pan) and gently shape into a loaf. Bake at 350 degrees for 1 hour or until the juice runs clear. Remove from oven and let rest for about 5 minutes before cutting into servings.

Favorite toppings you can use are tomato sauce, barbecue sauce, or ketchup. In addition to or in place of the minced onion, you can use grated carrots, scallions, chives, or green pepper. Flavor with fresh or dried herbs such as parsley, oregano, or thyme. Vary the size and shape of your loaves if you like. To get more servings from a loaf, add 1 cup of grated potatoes to the meat mixture. Blend thoroughly.
