Difficulty: Moderately Easy
Things You’ll Need:
- 3-4 lb. eye of round roast
- salt
- pepper
- oil
Step1
Preheat the oven to 325 F.
Step2
Salt and pepper the outside of the roast on all sides.
Step3
Heat enough oil to barely cover the bottom of a pan large enough to hold the roast.

Brown the roast on all sides in the oil.
Step5
Cover the pan and place in the preheated oven for 1 1/2 hours. Check the tenderness after 1 hour and continue cooking until the roast is done all the way through and tender. Add a little water if the juices dry out.
Step6
Remove the roast from the oven and place on the stovetop. Carefully add 1/2 - 3/4 cup hot water to the pan. Remove the roast and place on a platter.
Step7
Mix about 2 Tbsps. flour with 3 Tbsps. hot water in a jar with a lid, shaking until the flour is dissolved. Add this to the juices in the pan to make gravy, whisking well.
Step8
Slice the roast and serve with rice and the gravy.
