How to Make Caribbean Islands Pepper Wine

Pepper wine is a fiery flavoring used in various soups in the Caribbean, but you can easily use it for a special flavoring here at home too. You only need a drop or two to flavor your soup recipe.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 3 whole fresh hot chilies, each about 3 inches long.
  • 1/2 pint light rum, or substitute pale dry sherry.
  • a clean glass jar

Step1
Wash the chilies under cold running water and pat them completely dry with paper towels. (Wear rubber gloves to protect your hands, and don't touch your face or your eyes while working with hot peppers).
Step2
Place the chilies in a clean 1-quart glass jar and pour the rum over them.
Step3
Cover tightly and marinate at room temperature for at least 10 days before using.

Tips & Warnings

  • Make 10 days before you want to use this flavoring.
  • Remember you only need a drop or two to flavor a batch of soup.
