You can make a big pot of homemade vegetable soup and use it all week so fill your vegetable needs quickly with little fuss. It is great for people on the run. Food prices are rising and this is a great way to get save time and money. It is not much more trouble than opening a can of prepared foods and better for your health.

Instructions

Difficulty: Easy

Things You’ll Need:

  • Fresh vegtables
  • A big pot
  • A container of clear broth any type you like
Step1
Trim of the parts of the vegetables that are not edible. Rinse. Cut up and put in the pot. Add the broth. Cover and simmer until the vegetables are cooked. Usually about 10 minutes after the water boils.
Step2
Rice If you like you can add some rice, potatoes or pasta. I would not add all three. Choose one. If you are going to add rice put it in the broth and cook for about 10 minutes before adding the veggies.
Step3
Another option is to add some kind of beans or even a few types of beans. You can just open a can. Always rinse beans from a can as the fluid in the can is mostly what causes gas. Don't put raw beans in the soup as they need hours to cook.

That's it you are done. Enjoy!

Tips & Warnings

  • Naturally you can add seasoning in addition. I have found that the broth has enough salt so I don't add any more. Some broth is flavored with onion or garlic so read the label and choose according to your own taste. I try to stick with the most natural brands.
